The head of the Registry Office of Historical and Natural Monuments of the General Directorate of Cultural Heritage, Tourism and Handicrafts of Khorasan Razavi said: The indigenous knowledge of cooking ice cream pilaf Dargaz has been registered in the list of national monuments of Iran under number 2609 on February 16, 2014.

Mahmoud Toghraei added: The ice cream in the dictionary of Persian words meaning cooked can be considered the most famous and popular local food in Dargaz city in Khorasan Razavi province, which is still very popular.

He added: “This food has been prepared in ceremonies, parties and celebrations from the past until now.” Also, ice cream is usually cooked to entertain a guest who is of special importance to the landlord.

Tughraei stated: Yakhni is basically cooked lamb or goat meat that is cooked in its own way in Dargaz and eaten with rice. To prepare this dish, pieces of meat are fried in onions and cooked with water without adding any spices except salt.

He said: “The popularity of ice cream among locals and travelers has caused us to come across many restaurants and restaurants in Dargaz city, the first suggestion of which is to serve guests ice cream with pilaf with Dargazi rice.”

Toghraei said: “The importance of ice cream among the people of Dargaz has caused this food to continue to maintain its special place as the first choice for the food of the assemblies.” The cooking skills of this dish have been passed down from one tribe to another in Dargaz, and skilled and veteran chefs are trying to maintain and implement the special method and recipe of ice cream.

However, in most dictionaries, ice cream is used as cooked meat as opposed to raw, and freezing meat is used to mean cooking it. Of course, in the southern regions of the country, such as Bushehr, it is called Yakhani.
