The expert in charge of food tourism of the Ministry of Cultural Heritage, Tourism and Handicrafts added: Each of our provinces has special and diverse capacities in ancient Iranian cuisine, including 35 types of ancient food in Sistan and Baluchistan province, such as Sabzuk and Betahek, five types of food. Kohen mentioned in Khuzestan province, such as Shushtar fatty bread, and seven types of Kohen food in Yazd province, such as Eshneke.

He pointed out: We will certainly pay special attention to this category in the scientific secretariat of the Iranian food tourism table, and will use the opinions and scientific capacity of experts to revive old Iranian foods.

He said: The oldest stew and rice in the world was cooked in Iran, but cooking rice in ancient Iran had special customs and traditions that are still lasting. In ancient Iran, special attention has been paid to the hardness and salts of water, the type of climate, air temperature and altitude as effective factors that increase the quality of health and pleasant taste of food in ancient Iran.

For example, caravan foods (travel foods), market foods, military foods, chapari foods, peasant foods (agriculture), shepherd foods, and washing foods were various parts of ancient Iranian foods.
